Turin, la ville écrin à portée de main
La capitale du Piémont se loge entre les reliefs aux échines moelleuses et le cours sinueux du Pô. Les palais fastueux, galeries, quartiers multi-ethniques, cafés historiques tout en moulures et en bois cirés offrent un flegme suranné et déluré aussi audacieux qu’un bain le lundi matin.
Où que l’on s’aventure en Italie, tout est toujours une question de beauté. Partout. À toute saison. Dans la brume du matin lorsque l’on descend du train. Dans le vol des oiseaux qui embrasse l’horizon vallonné. Dans l’ombre de ses arcades imposantes et pétries d’histoire qui se fondent parmi les immeubles au design contemporain. Frictions de sensations où on peut se dire des tendresses. Fragments délicieux engloutis dans les carnations romancées.
Turin, au plan géométrique rectiligne, est toujours en mouvement. Stimulante, elle se découvre aisément à pied. Classée parmi les 52 destinations incontournables par le New York Times, les restructurations se sont succédées depuis les Jeux olympiques de 2006. Cette métamorphose urbaine a consenti de restaurer une bande-son qui swingue, d’affiner son grain, de sublimer les quartiers industriels et ouvriers au profit de la culture et de la gastronomie.

VILLE FESTIN : CLAQUER DANS LE RÉPERTOIRE LOCAL
Autour de la table, comme toujours en Italie, on se régale. Là où le monde se raconte et les conversations se réveillent, on y honore le goût de l’amplitude, les accords et les variations des senteurs. Il s’agit ici de poèmes gustatifs, d’arômes ensoleillés qui ressourcent le corps et l’âme. Le temps d’un bicerin, boisson locale confectionnée à partir d’expresso, de chocolat chaud et de lait, breuvage connu depuis le siècle des Lumières et a toujours été très apprécié par les écrivains, d’Alexandre Dumas à Umberto Eco en passant par Ernest Hemingway. Les minutes se dilatent.
Il suffit d’un coup d’œil des deux côtés de la route qui mène à Turin pour apercevoir les champs, les exploitations. C’est de cette terre-là que proviennent les différents types de riz, la noisette employée dans les pâtisseries de haut vol ou encore la truffe blanche. Cette dernière était surnommée par Gioacchino Rossini, le « Mozart des champignons ». L’ingrédient central du Tournedos Rossini était autrefois déjà un mets convoité dans toutes les cours d’Europe. Les fromages ne sont pas en reste : la robiola di Roccavareno, les tomini in salsa verde, un fromage de lait de vache avec une sauce au persil de la Val Chisone, et le gorgonzola de Novara au label d’appellation d’origine contrôlée font la renommée du domaine laitier.

L’arrivée du cacao, introduit au XVIe siècle par Emmanuel-Philibert de Savoie, lança bientôt le pays dans une importante production chocolatière. À la fin du XIXe, les maîtres chocolatiers Prochet et Caffarel produisirent la crème de gianduia en mélangeant la pâte de noisette locale au cacao et au sucre. Les gianduiotti, petits chocolats fourrés à la crème de noisette onctueuse et à la forme triangulaire rappelant le couvre-chef de Gianduia, personnage turinois de la commedia dell’arte, firent leur apparition à cette période.
Autre incontournable à Turin, une variété de pâte longue et fine, le tajarin, à mi-chemin entre les spaghettis et les tagliatelles, servies avec des écailles de truffe. Les agnolotti del plin, petits raviolis farcis de trois variétés de viande (veau, bœuf et porc) braisés puis mijotées avec des épinards ou du chou, sont, quant à eux, habituellement accompagnés d’un bouillon.
Les spécialités carnées, issues des élevages bovins locaux, telles que le brasato al barolo, une viande revenue au vin vous mettront les papilles en joie. La bagna cauda, une sauce chaude à base d’anchois, d’ail et d’huile d’olive dans laquelle on trempe des crudités à la façon d’une fondue, est à découvrir également. Au restaurant Da Mauro, proche du Musée Egizio dans le centre, le chef vous proposera une cuisine prometteuse et proche de ses produits. Une adresse un brin sentimentale et une clientèle au diapason.
En fin de journée, l’aperitivo, instant sacré, vous attend au comptoir d’un café parmi le babil aéré des locaux sur leur trente et un. L’heure parfaite pour un verre de Vermouth. La réputation de ce vin aromatisé débuta à partir du XVIIIe siècle dans les salons et cafés du pays.

UNE CUISINE PRÈS DE LA TERRE CHEZ LE CHEF MARC LANTERI
Collisions de notes et de finesse. Dans l’assiette, la clarté des matières premières. Le chef Marc Lanteri défend une cuisine de puristes. Y cohabitent un terroir, une rigueur et un amour de son métier. Formé en France, travaillant aux côtés d’Alain Ducasse au Louis XV à Monaco, de Christian Willer au Majestic à Cannes, de Philippe Rostang à La Bonne Auberge à Antibes puis au triple étoilé Enoteca Pincchiori à Florence, Marc Lanteri a su trouver une cuisine limpide qui lui ressemble et qui en fait aujourd’hui sa signature. Au restaurant Al Castello, situé dans le prestigieux château de Grinzane-Cavour, datant du XIIe siècle et classé au patrimoine de l’Unesco, Marc Lanteri compose, crée. Il prend aussi le temps de travailler dans son potager pour réfléchir à des associations de saveurs qui mêlent le Piémont à l’esprit français. La sélection des vins naturels est faite par son épouse Amy rencontrée au restaurant Delle Antiche Contrade à Cuneo à la fin des années 1990.

ALLER AU CŒUR DU RAISIN
Barolo, Nebbiolo et Barbaresco au goût flamboyants sont parfaits pour accompagner les viandes rouges et les fromages à pâte dure que l’on fabrique dans la région. Dans le domaine Vajra, les vins permettent de se raccrocher au réel, à cette terre pleine de vitalité. Il faut parcourir une soixantaine de kilomètres depuis Turin en direction du sud pour aller à la rencontre de ce domaine familial. Le propriétaire passionné Aldo Vajra perpétue l’héritage de son père Giuseppe Domenico Vajra qui commença à produire des vins d’une élégance exquise dès les années 1970. Aldo Vajra cherche à maintenir un équilibre naturel de la vigne et du terroir dans une recherche d’une agriculture respectueuse de son environnement.

UNE ARCHITECTURE SPECTACULAIRE
De façon omniprésente, la capitale du Piémont est un livre d’histoire à ciel ouvert où se mêlent modèle d’urbanisme romain, médiéval, faste du baroque et la singularité de l’architecture moderne. Ses ruelles, ses jolies places inondées de soleil, ses arcades et ses fontaines dégagent un charme suranné.
Du reste, les trésors culturels coulent à profusion à Turin. L’église baroque Saint-Laurent, située sur la Piazza Castello dans le quartier historique, en est l’un d’eux. Construite en 1557 lors de la bataille de Saint-Quentin opposant la France à l’Espagne, ses marbres polychromes, ses dorures, ses sculptures et sa spectaculaire coupole en forme de fleur à huit pétales vous feront oublier de reprendre votre souffle. Lors des équinoxes d’automne et de printemps, la lumière du soleil éclaire les fresques des chapelles latérales qui restent dans l’ombre le reste de l’année. L’architecte en charge du projet, grand féru d’astronomie, avait conçu les plans de manière à honorer sa passion.

À deux pas, le Duomo di San Giovanni (la Cathédrale Saint-Jean-Baptiste) au style dépouillé de la Renaissance, située sur la Piazza San Giovani, compte un campanile en brique rouge, une église ainsi qu’une rotonde abritant la relique originale du Saint-Suaire. Parée de marbre blanc, la cathédrale possède sept chapelles latérales. Le linceul qui aurait enveloppé le corps du Christ fut transféré à Turin à la fin du XVIe siècle et fait aujourd’hui encore l’objet de nombreux pèlerinages. Il est aujourd’hui conservé dans une châsse en verre et n’est visible qu’en certaines occasions.
La beauté partout
Classé au patrimoine de l’Unesco, ne manquez pas le Palazzo Madama sur la Piazza Castello. L’observation d’ensemble permet de distinguer les différents styles architecturaux qui se superposent. Elle invite à une lecture de l’histoire de Turin ; depuis sa fondation par les Romains en passant par ses tours du Moyen Âge jusqu’au triomphe du baroque. Devenu un musée, le lieu présente des collections variées de sculptures, de fresques, d’orfèvrerie, de mobilier et de tableaux.
Entre deux visites d’églises, les amateurs d’art contemporain seront comblés à la Galerie d’art moderne (GAM), l’un des meilleurs musées d’art moderne du pays. Il est doté d’une collection permanente parmi les plus anciennes et importantes d’Italie comprenant 47 000 œuvres (exposées et conservées), et propose des expositions temporaires. Créé au XIXe siècle, le musée abrite peintures, dessins, sculptures photos, installations artistiques et gravures qui couvrent la période du milieu du XIXe à nos jours. La Galerie offre une place de choix aux artistes de l’« arte povera », le courant artistique créé dans les années 1960 et qui se concentre sur le processus de création avec des matériaux naturels. Des œuvres d’artistes internationaux tels que Paul Klee, Yves Klein, Auguste Renoir, Anselm Kiefer, Andy Warhol, Fernand Léger et Marc Chagall sont également exposées.
Dans les cafés historiques, au moment où le soleil se couche, les sons se font plus doux et dissipent l’ennuagement du cœur. Lorsque les portails s’ouvrent dans un frémissement métallique, passez la tête pour y flairer les cours intérieures secrètes. Quiétude dérobée. Embrasement du cœur et recueillement. En hauteur, quelques vieilles dames accoudées aux fenêtres observent les passants. Au loin, les cloches d’une église qui résonnent. Merveille du temps épanoui. Serrer son bonheur.
